Spicy Crispy Chicken

Ingredients:

1 lb of chicken breast
4 tbs of cornstarch powder
2 cups of oil for frying
1 tbs of soya sauce
1 tbs of oyster sauce
1/2 cup of plum sauce
1/2 cup of Thai spicy sweet chili sauce
2 red chilies diced
1/2 scallions diced
1 tsp of white pepper
1 tsp of shiao shing wine

Method:
Diced chicken breast into bite pieces. Marinate with soya sauce, oyster sauce, white pepper and some shiaoshing wine in zip lock overnight.

Heat a saucepan with 2 cups of oil for frying until high heat. Take the chicken pieces and coat with cornstarch and fry till golden brown.

Pat on paper towel to remove excess oil.

When all the chicken are done. Heat a wok with a tsp oil. Add red chilies, plum sauce, Thai spicy sweet chili sauce. Add chicken pieces and remove immediately. Garnish with scallions.

Serve with Jasmine Rice. Yummy!
