Mikee's Chicken Scallopini








Ingredients:
3 tbs of oil for sauteing
2 pieces of chicken breast
1/2 cup of whole wheat flour (for a healthier version)
1/2 cup of whole wheat panko bread crumbs (Ian's) see pic. For a healthier version.
1 egg beaten with 2 tbs milk to make egg wash
1 tsp of white pepper
1 tsp of five spice powder
1 tsp of sugar
1 tbs of oyster sauce
1 tbs of soya sauce
1 tsp of shaoshing wine (or sherry)

Method:
Sliced chicken breast into 3 pieces - gently pound it with meat pounder to flatten chicken (not too much)
Sprinkle white pepper all around
mix the marinate (in a small cup): five spice powder, sugar, oyster sauce, soya sauc and shaoshing wine.
coat chicken with marinate. cover with saranwrap and refrigerate at least 2 hours.
Prepare a plate with flour, another with egg wash and another with bread crumbs.
Take the chicken pieces and dredge each piece in flour, then egg wash and finally bread crumbs. Set aside. Repeat till all chicken pieces are done.
Heat a non-stick pan with vegetable oil. Saute chicken pieces on each side till golden brown. Remove onto paper towel to remove excess oil.
Serve wth a wedge of lime.
