Healthy Vegetarian Stir Fry Brussel Sprouts with Marcona Almonds


Ingredients:
1 bag of brussel sprouts (washed, drain and quartered)
1 cup of sliced shitake mushrooms
3-4 slices of red bell pepper
1/2 cup of Marcona almonds (toasted)
1 tsp of chopped garlic
1 tbs of extra virgin oil
1 tsp of salt
1 tsp of pepper
1 tbs of soya sauce
1 tbs of oyster sauce or chicken sauce
a splash of sherry

Method:
Heat oil in wok on high heat. Start layering by stirying the garlic for 1-2 mins or golden, then add shitake mushroom, stir fry for another 1-2 mins, then add the red bell pepper, and brussel sprouts. Stir fry until brussel sprouts turned color at least 2 mins. Now add all the seasonings and taste. Add Marcona Almonds at the end.

*** Layering in stir frying is a method that my elders taught me. When stir frying, do not add everything at once. You have to stir fry each item until it releases its flavor or wilted etc before adding the next ingredient to achieve the best natural flavor.
