Curry Quinoa






Ingredients:
2 Cups of Quinoa
3 tbs Olive Oil
2 1/2 tbs Curry powder (for the best buy from http://www.etsy.com/shop/MyDadsCurry )
1 cup chopped herbs, I use basil, dill but whatever works
1 cup sliced mini cherry tomatoes
1 cup roasted pinenuts (pignolis)

Method:
Rinse Quinoa over running water
You can cook Quinoa in a rice cooker or over stovetop
Follow the directions on the box to cook quinoa, add 1 tbs of olive oil so it wont stick
Once cooked, remove Quinoa from pot or cooker into a Salad bowl
Fork Quinoa to fluff (like Couscous)
Add the remainder of 2 tbs Olive oil
Add curry powder
Add salt and pepper to taste
Add mini cherry tomatoes, herbs
Toss and add pinenuts at the end

Serve !
