Thai Tom Yum Mussels with Glass Noodle





This is a really simple dish to make - 15 mins !! For an exotic dinner, use small clay pots like the one on this picture. Makes you feel like you're in a Thai Restaurant !
Ingredients:
Tom Yum Paste (see bottle in picture) - 2 tbs and adjust to taste
2 cups of glass noodle - soak in cold water
2 cups of water
Vietnamese Coriander - 2 sprigs
3-4 Lime Leaves (Limau Purut)
2 cups of Mussels
Method:
In a clay pot or saucepan, add water and bring it to boil. Then add Tom Yum paste and stir it in to dissolve. Lower heat to medium. Simmer for 5 mins. Add Vietnamese sprigs.
Add mussels and glass noodle. Taste to make sure it is salty and spicy enough, otherwise add another tbs of tom yum paste until u feel its good enough. When mussels opened, dish is done. Remove Vietnamese coriander and discard. Garnish with lime leaves and serve immediately !!
