Dutch Baby - Oven Pancakes
Have you gone to the Original Pancake House and ordered their "Dutch Baby" breakfast? Well, it is my husband's favourite on the menu. He absolutely loved this light pancake filled with all the berries. It is so refreshing and healthy. I decided to make this for him after last weekend's Sunday morning breakfast at The Original Pancake House. My husband was absolutely thrilled when I presented this to him ! It just made his day.
Ingredients:
1 cup of strawberries, sliced
1 cup of blackberries or blueberries
1 cup of raspberries
1 tbs of sugar
1/2 cup of milk
1/2 cup of all-purpose flour
3 eggs
1/4 tsp of salt
2 tbs of butter, melted
4 tsp of butter melted
1 tsp vanilla
1 tsp of grated orange zest
Maple syrup and confectional sugar for dusting
Method:
Heat oven to 425 deg F.
In a bowl, add all the berries and sugar in a bowl and set aside.
In a bowl of gratin (about 6 inches in diameter, or a souffle gratin), add a tsp of butter.
In a bowl of electric mixer fitted with whisk attachment, add eggs and beat on medium. Add milk and slowly add flour, vanilla, orange zest, 2 tbs melted butter, salt and mix until smooth.
Place gratin in the oven for 3 mins until the butter is hot and bublly. Then remove the gratin and add 1/2 cup of batter and bake for 12 mins. Repeat 3 more times with the rest of the batter.
Place the berries in the dutch oven pancake and dust with confectioners sugar.
Its is absolutely too good to eat !
