Stir Fry Bean Sprouts
4 cups of bean sprouts
2 stalks of spring onions - cut into 1 inch (I used some chinese greens)
2 stalks of spring onions - cut into 1 inch (I used some chinese greens)
1/4 of a red pepper - julienne
a few pieces of chinese mustard - julienne (optional)
a few pieces of Anchovies or Asian salted fish
2 cloves of garlic - minced
3 tbs of veg oil
1 tbs of soya sauce
1 tbs of sherry or chinese cooking wine
pinch of salt
pinch of sugar
pinch of white pepper
Method:
Wash and drain bean sprout in colander
In a hot wok, add oil and saute garlic, chinese mustard if you are using that. Add the salted fish or anchovies, red pepper and saute for 1 min. Add the bean sprouts and stir fry for 1 min. Add cooking wine, soya sauce, sugar, salt, pepper and add the spring onion last.
Do not cook for too long as the bean sprouts will wilt very quickly and you really want a hot wok and stir fry everything quickly and take it out to serve. Garnish with some spring onion for presentation.
Serve with jasmine rice !
