Tender Shaken Beef Cubes

Here's a really delectable and popular vietnamese beef recipe my co-worker Cecilia Nguyen learned from her mom that's quick & easy to make. Ingredients: 2 tbspn oil 2 tbspn chopped garlic 1 lb. steak cut into 1 inch square bite size cubes (NY strip, rib eye or fillet mignon are best) 1 tbspn fish sauce 2 tspn soy sauce 1/2 tspn sugar 1/2 tspn black pepper
Marinate: In a medium bowl, combine fish sauce, soy sauce, sugar, pepper and stir. Add the beef and mix evenly. Cover and marinate for 30 minutes in the fridge.
Salad:
Beef can be served on a bed of leafy greens or watercress with cucumber slices and sour cabbage or leeks. Prepare and arrange the salad on a large plate ahead of time.

Cook beef:
Heat oil in wok or skillet. Add the garlic and wait till it turns slightly yellow. Add the beef and cook for a couple minutes till browned. SHAKE the wok or skillet by the handle while it's cooking several times to turn the meat. Continue this shaking till all sides of the beef cubes are evenly browned and cooked according to how you like it. Careful not to overcook so the meat is tender. Pour onto the plate of salad and serve immediately. Serves 3-4 people with a side of white jasmine rice.
