Nancy's Steam Cake


This cake is steamed, made of eggs, sugar and flour - all in equal amounts. Easy to make. For an elegant presentation, use a paper cake mould which you can buy from specialty kitchen store such as Sur La Table. Ok, my sister, Nancy Ng who lives in UK, loves to make this and gave me the recipe. Didnt realize its that easy !

2 cups of eggs - 16oz Pyrex measuring cup
2 cups of sugar - same measuring cup
2 cups of flour - sift
Cake mould (paper) or use a colander (but you have to lined it with parchment paper)



Use an electic mixer or hand mixer to beat the sugar and eggs until pale white. Fold in the sifter flour gently and pour the mixture into a cake mould. Steam in a wok for about 20 mins for a 6 inch cake above. Decorate as you please. Enjoy it while its steaming hot with a cup of tea or coffee.

    How much flour and sugar and how many eggs ?

  2. I am going to update the recipe to make it more specific. Use 2 cups (Pyrex measuring cup) which is 16oz which is 500ml.

    So you break as many eggs as possible into that 16oz cup and fill it up. Then pour it into a mixing bowl. Then use that same cup to measure 16oz cup of sugar and pour into the mixing bowl. Mix it with electric hand mixer until pale white. Then use that same 16oz cup to measure same amount of flour. Sift the flour into the mixing bowl with a spatula. Gently fold it in. Make sure Wok is ready with steaming water. Dont open the cover for 20 mins - 30 mins when steaming.
