Bailey's Chocolate Poke Cake

 



INGREDIENTS:

2 cups all-purpose flour (250g) 

2 cups granulated sugar (414g)

3/4 cup unsweetened cocoa powder (85g)

2 tsp baking soda

1 tsp salt

2 large eggs

3/4 cup milk (80ml)

1 cup vegetable oil (240ml)

1 cup Baileys Irish Cream divided (240ml) 

1 tsp vanilla extract

3/4 cup boiling water (180ml)

1 cup sweetened condensed milk (240ml)

3/4 cup semi-sweet chocolate chips (127 g) 

2 cups heavy whipping cream, cold (480ml)

3/4 cup powdered sugar (86g)

1/4 cup unsweetened cocoa powder (29g)

2 tbsp Baileys Irish Cream (optional) 

1/2 tsp vanilla extract 

TOPPING (I didn't do this) 

mini chocolate chips 

Chocolate sauce drizzle 

METHOD: 

Preheat oven to 300 Deg F (148 C) 

Lightly grease a 9 X 13 inch baking pan 

In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt. 

Add eggs, milk, vegetable oil, 1/2 cup Bailey's Irish Cream, and vanilla, Mix until smooth. 

Slowly pour in the boiling water, mixing carefully. The batter will be thin - this makes the cake extra moist. 

Pour the batter into the prepared pan and bake for 40-45 minutes, until a toothpick inserted in the center comes out with a few moist crumbs.

Remove the cake from the oven and poke holes all over the cake using the handle of a wooden spoon or a straw. 

Place the chocolate chips in a medium bowl. Heat the sweetened condensed milk and remaining 1/2 cup Baileys in the microwave until hot and just starting to bubble.

Pour the hot mixture over the chocolate chips and whisk until smooth and glossy. 

Immediately pour the chocolate mixture over the warm cake, spreading it so it sinks into the holes. This step gives the Baileys Chocolate Poke Cake its signature googey center. 

Refrigerate the cake until completely cooled. 

For the topping, whip the heavy cream, powdered sugar, cocoa powder, Baileys and vanilla until stiff peaks form. Spread the chocolate whipped cream evenly over the cake. 

Finish with mini chocolate chips and a drizzle of chocolate sauce for that bakery style finish. (I did not do this, I just shaved some chocolate over the whipped cream because I do not like to eat chocolate chips that are not melted). :)
