ELSIE’s Hainanese Chicken Rice



 Ingredients: 
1 chicken (preferably organic or free range) 
2 sprigs of spring onion
1 knob of ginger
1 knob of garlic (peeled) 
Enough water to cover the chicken in a pot. 
A couple of tbs of sesame oil 
Salt
Cucumber


Rice: 3 cups of rice 
1 knob of ginger
2 large shallots
2 tbs of garlic
3 springs of pandan leaves, tear it up and tie into a knot
salt to taste
3 tbs cooking oil
(if you have hainanese sauce, add them to the rice)
a few kaffir leaves

Special Chili Sauce: 
Fresh chilis
Ginger (or from bottle)
lime juice
salt 
Hainese Dark Soya sauce

Prepare the chicken: 
Wash chicken and salt the insides and leave it aside. 
Heat a large pot (deep pot like a pasta pot) filled with enough water to cover the chicken. Drop in the ginger (smashed it), garlic and spring onion. 
When it is boiling, submerged the chicken into the water and turn the stove off. Put a timer on (approximately 45mins - 1 hour depending on the type of pot whether it'll retain heat. If it does, then 45 mins will do). 
After the timer goes off, remove the chicken and set aside. 
Turn the heat on and let the water boil again. Once its boiling, submerged the chicken again but this time set the timer for 30 mins. 
Once the timer goes off, remove the chicken and set aside. Brush the chicken with sesame oil and a sprinkle of salt (not too much). Cut up the chicken and plate it. Garnish with cilantro. Serve with cucumbers. 


Prepare the Rice: 
Rinse the rice under cold water and leave aside. Saute the shallots, ginger and garlic in oil over medium heat until fragrant. Mix it with the rice. Add the chicken broth from boiling the chicken (approx 2 cups or using finger measurement). Add the pandan leaves and kaffir leaves. Add some salt to the rice. And if you have Hainanese sauce, add a few tbs. 
Cook using a rice cooker. 

Special Chili Sauce: 
Grind fresh chilis, ginger (or from bottle) and add some salt and lime juice. Add a few drops of dark soya sauce (or get the Hainanese Soya Sauce from Asian Grocery store)
