No Sugar No Flour Blueberry Poppyseed Mini Loaves



Ingredients: Makes 4 servings or 3 Muffins per serving

12 oz mashed banana (You can use this to make just banana loaf. Use 24oz of Banana and eliminate the Blueberries).

12 oz Bluberries

4 oz blended oats to make powder (blend them in a blender) 

2 tbs poppyseed

½ tsp salt

1 tsp baking powder 

½ tsp baking soda

4 oz almond butter

4 eggs

3 tbs lemon juice

Method: 

Mix all ingredients to make a batter, chill the batter in the fridge for 30 minutes. Place mixture into muffin tins, 4 mini loaf pans or even a cake pan (after baking you would separate into 4 servings). Bake at 375 for 25 minutes.
