Poached COD Fish with salted mustard green
Ingredients:
6 pieces of cod fish (fillet)
2 cups of julienned ginger (less if you don’t like ginger)
2 cups of salted mustard green (rinse in hot water to rod of the salt)
1/2 cup of dried preserved black beans
2 red chilies, sliced
2 tbs of oyster sauce
2 tsp of fish sauce
1 tsp salt
1 cup of oil
Method
1. Wash and clean cod fish. Sprinkle salt over fish and set aside.
2. In a wok, heat up the oil and fry the ginger until brown and crispy, remove ginger and set aside.
3. Remove 1/2 of the oil in the pan. We don’t need that much for cooking fish. Sauté the mustard green, and black beans until fragrant. Add oyster sauce. Mix them up.
4. Place the cod fish in the work to cook with the mustard green and black beans. Add fish sauce. Cover on medium heat. Cook for 5 mins. Taste.
5. Open cover and add chilies. Drain the fish onto a plate. Sprinkle the ginger on top, scallions and cilantro.
Enjoy with jasmine rice.
