Carlotta - Lime Mousse










If you do not like very sweet desserts, this is the perfect dessert to make. This dessert is light, tangy and not too sweet. Please use fresh limes as it makes all the difference.

reduced-fat cream cheese, at room temperature

limes, juiced (about ½ cup juice) and 2 tsp. freshly-grated lime zest, plus more zest for garnish, divided

Method: 
Using a stand mixer, attached the whisk on medium, and whisk all the ingredients except the lime zest and Marie biscuits. Mousse should be fluffy and soft peaks. 
Fold in some zest and leave some for garnish. 
Put one layer of marie biscuits at the bottom. Scoop the mouse and lay over the biscuits about 1/2 inches. Repeat until all mousse are finished insuring the mousse is at the top. Garnish with lime zest. Cover with plastic wrap and refrigerate for overnight. Cut and enjoy!
