Soufflé Pancakes





So my sister who lives in Singapore coming to visit me in December told me about these wonderful soufflé pancakes. She sent me the recipe and told me to make it for her when she visits. So here’s my first attempt this morning and my family gets to be the guinea pig. They were delicious, thick but light, fluffy tasted like clouds in your mouth soufflé pancakes.

Ingredients: (makes 6 small tall pancakes) 
 4  large eggs
 3 Tbsp whole milk 
1/2 tsp vanilla extract
1/2 cup cake flour 
1 tsp baking powder 
4 Tbsp sugar (I used castor) 
2 Tbsp butter for greasing pan 
2 Tbsp water (for steaming)

Fresh Whipped Cream (optional)

1 cup heavy (whipping) cream 
3 Tbsp sugar 
Toppings

Method: 

1.     Separate egg yolks from whites. Keep egg whites in freezer about 15 mins. 
2.     Beat egg yolks with vanilla until creamy. 
3.     Sift cake flour and baking powder into egg yolk mixture. 
4.     Use an electric mixer and whip the egg whites with sugar until stiff peaks form. But do not over beat it otherwise the pancakes will crack. 
5.     Fold in the whipped egg whites into the egg yolk mixture. Make sure you do this gently not to deflate the egg whites. Mixture must be stiff. 
6.     Use a non stick pan with cover big enough for 3 small pancakes. Use a small ladle to spoon batter. 
7.     Heat pan heat to on low. Butter pan and spoon over batter for 3 small pancakes. Next, stack one more scoop to the first pancake. Then move on to the next two pancakes giving each 2 small scoops. Keep the height! 
8.     Set timer to 6 mins. Splash some water on the pan, it should steam up. Cover them to let steam cook the pancakes. 
9.     After 2 mins, when pancake cooked, stack one last scoop to all 3 pancakes. Again, keep the height. 
10.  Splash the water on the pan, it should steam up. Cover them to let steam cook the pancakes. 
11.  After the 6 mins, gently turn pancakes over one at a time making sure not to crack them. 
12.  Splash the water on the pan, it should steam up. Cover them to let steam cook the pancakes for another 4 mins. 
13.  When done, pancakes should be lightly brown. 
14.  Whip cream and sugar to make whipped cream. 
15.  Serve pancakes with fruits, whipped cream and syrup. Dust with confectioner sugar.
