Malaysian Satay



There is a place in Malaysia called Kajang and it is famous for its Satay. Satay is a Malaysian street food that is grilled over charcoal. It is marinated with spices that will make the meat so fragrant and flavorful that once you learned to makes these, your family and friends will love you more!! You can adjust the taste of adding more or less sugar, salt accordingly. Sometimes adding chilies to make them spicy.

Ingredients:
4 lbs of meat (choice of chicken, beef or lamb). Chicken thigh is better than breast as it is less dry when grilled
3 tbsp. of Coriander seeds
1 tsp of Cumin
12 thin slices of Galangal (a type of ginger)
5 large pieces of turmeric (sub with turmeric powder)
3 stalks of Lemongrass (thinly sliced)
1/2 tbsp. of lime juice (or sub with lemon juice)
2 tbsp. of palm sugar shaved (or sub with sugar) 
1 tsp salt 
2 tbs vegetable oil (or any cooking oil but not olive oil) 
4 tbsp. water
1/2 cup melted butter

Method:

1. Fry coriander and cumin seeds in a pan over low heat (until fragrant) about 5 mins. 
2. Put Coriander, Cumin, Galangal, Tumeric, Lemongrass, Lime juice, Palm sugar, salt in a blender. Add water slowly. 
3. Blend them until everything is smooth, into a not too watery paste. Add the vegetable oil and blitz it for 5 seconds. 
4. Sliced up the meat into bite pieces. (not chunks or not like kebab size so that it'll absorbed the marinate and cook quickly). 
5. Marinate meat with the blended spices. 
6. Keep meat in overnight in the fridge.
7. Skewer the meat about 4-5 pieces each. 
8. Grill on BBQ or on a grill skillet on stop of stove. Brush with melted butter as you're grilling. Try to caramelize the meat over high heat when done.(edges are burnt). 
9. Serve with Coconut Peanut Sauce. (i got tired of making my own Peanut sauce and I found one just as delicious from Whole Foods).
