Radish Rice Cake (Dim Sum menu)

Press in a cake pan
 
 
Pour the rice flour mixture into the radish and cook until it forms a dough
 
 
Fry the mushroom, radish, sausage, dried shrimps with garlic. (for Vegetarian, substitute sausage and dried shrimps with "preserved sweet radish"

This rice cake is cut and fried in square pieces at Dim Sum. It is easy to make and yields a lot to serve a large crowd. Substitute the meat with preserved sweet radish and it becomes vegetarian dish.
 
 
Ingredients:
 
1 packet of rice flour (see picture) and 4 tbs of starch powder
8 cups of water
1 piece of radish (Daikon, shred finely)
1/4 tbs of vegetable oil
1/4 cup of shitake mushroom
1/4 cup of dried shrimps - chopped
4 pieces of Chinese sausage - diced
1 cup of shallots chopped
 1 tbs of garlic chopped
salt and pepper
 
Method:
Spray springform cake pan with oil. leave aside.
Mix rice flour, starch powder, salt and pepper in a bowl with water (8 cups). Ensure no lumps. Use hands to feel. Leave aside.
In a wok, heat oil and fry the shallots, garlic until its fragrant about 8 mins. Add dried shrimps, sausage, radish, layering ensuring each cook well.
 
Turn to medium heat, add the rice water, and cook in wok until it becomes a dough. Taste and add salt and pepper as needed. Remove from wok and press into cake pan.
 
Add hot water on wok, over a metal stand, put the rice cake and steam for about 40 mins. Cover and ensure water is steaming and make sure water does not dry up.
 
Remove and let it cook down all the way. (Overnight). Cut into square pieces and fry. Serve.
