Healthy Vegetarian Lettuce Cups with Tofu






Ingredients:
about 12 leaves of lettuce (wash and dry)
1 cup of firm tofu
1 cup of chopped waterchestnuts
1/2 cup of sliced shitake mushrooms
1/2 cup of julienne carrots
1/4 cup of diced scallions
2 tbs of rice bran oil (or veg oil)
1 tsp of sesame oil
a dash of white pepper
1 tbs of soya sauce
1 tbs of oyster sauce
1 tsp of shaoshing wine (or sherry)
a dash of sugar

Method:
Heat rice ban oil on wok in high heat. Stir fry each of the ingredients one after the other layering each for 1-2 mins: mushroom, carrots, waterchestnuts, tofu. Then add all the seasonings: oyster sauce, soya sauce, shaoshing wine, sugar. Taste. Add white pepper and sesame oil last. Remove and let rest on a plate.

Prepare lettuce on plate and fill with tofu stir fry.
