Nanking Black Rice with Salmon/Shrimp


This recipe is inspired from my favorite English chef. She made the Nanking Black Rice with Shrimps. The black rice was really intriguing so on one of my trips (gosh, I go to the newly opened Whole Foods at SouthPark every other day, love it, love it ! ), I found the black rice and decided to venture into this recipe. I have to say it is awesome, it is very nutty almost like brown rice. It is quite a change from your ordinary white, basmati or brown rice. It's welcoming change to supper for the family!

Dressing:
2 cloves garlic, minced
2 (or more) fresh Thai bird eye chilies
1 inch piece of fresh ginger, grated
4 tbs fish sauce (use the cuttlefish brand)
2 tbs lime juice (about 1 lime)
4 tbs water
2 tbs sugar

Salad:
1 cup plus 2 tbs Nanking black rice
1 piece of salmon (marinate with soya sauce and freshly ground pepper) and sauteed in a pan or 18 shrimps
salt
juice of half lemon

Method:
To make dressing, simply mix all ingredients together.
To make the rice, cook it like white rice either in a pot or rice cooker.
If you are using Shrimp, poach the shrimps in some simmering salted water to which you add the juice of half lemon for 5 mins until pink and removed.
let the rice and shrimp cool (or the salmon).
Add the dressing to the rice, fork this through and then tumble the shrimp or salmon on top. Spoon more dressing on top.

Serve as a main course or starter ! It's awesome to have some Nanking black rice for a change !!
