Chicken Chow Mein
So easy and simple to make. Please make it for your family this weekend !
Ingredients:
1 pkt of dried Chinese egg noodles
1 piece of chicken breast, shredded
1 red bell pepper, sliced
3 - 4 pcs of shitake mushroom, sliced
6 scallions, sliced
2 cups of bean sprouts
2 tbs of vegetable oil
3 tbs of oyster sauce
2 tbs of light soya sauce
2 tbs of white pepper
2 tbs of grated ginger
2 garlic cloves chopped
2 tbs of shiao shing wine
1 tbs of sesame oil
Method:
1. Place the dried egg noodles in boiling water and cook Al Dente. (follow instructions on package). Rinse and run through cold water to stop the cooking process, drain on sieve. (You may use thin spaghetti if you like).
2. Preheat a wok over medium heat. Add vegetable oil and swirl it around to coat the sides of the wok. When oil is hot, add the shredded chicken, garlic, ginger, bell pepper, mushrooms, oyster sauce and stir fry for about 5 mins.
3. Add the noodles to the wok and toss well and stir fry for another 5 mins. Add the oyster sauce, shao shing wine, bean sprouts, soya sauce, white pepper and scallion. Toss until thoroughly combined.
4. Drizzle sesame oil, scallion and taste. Add more soya sauce if needed.
5. Serve immediately.
