My Dads Curry
I named this dish after my dad who taught me how to seek out the best foods and how to cook. This curry is his specialty. The original MyDad'sCurry calls for his secret ingredient, the candlenuts which you can get from Asian Grocery store. My dad who also used to own a grocery store sells these nuts which I thought were little rocks when I was a child. When the shell is cracked open, a nut that looks like Macadamia is cased in it. If you want to add the candlenuts, use a handful of 5-6 nuts, pound it with a mortar until its powdery. It gives the curry added nutty flavor. Enjoy !

Ingredients:
3 pcs of potatoes (Russet or Baking potatoes), peeled and cut up into big bite pieces.
3 curry leaves
1/2 cup of onions
3 cloves of garlic
4 pcs of candlenuts (optional)
1 cinnamon
2 star anise
1/2 cup of chicken curry powder
a dash of sugar (optional)
1 tbsp of chicken seasoning (Knorr or similar)
1 tbsp of salt
3 tbs of oil
1 can of coconut milk. If you prefer curry to be watery, add ½ cup of water.
Method:
1) Grind or chop finely – onions and garlic. (add candlenuts to the grind).
2) In a pot over medium-high heat, add oil, saute the onion and garlic mixture until fragrant.
3) Add cinnamon, star anise, curry leaves and fry for 1 min.
4) Add curry powder and fry for about 2 mins or until fragrant.
5) Add meat and potatoes and stir fry until meat is all coated with curry mixture and cooked outside.
6) Add coconut milk and/or water and simmer over medium/low heat for about 20mins and/or potatoes are soft.
7) Add chicken seasoning, sugar, salt to taste.
8) Turn off heat and serve Curry with Naan, Jasmine/Basmatic rice or bread.
