Steamed Sponge Mini Cakes
The Malays calls it Kuih Bolu Kukus. The Chinese Hokkiens originated this and the Cantonese calls it Kai Tan Koh (literally translated chicken eggs cake).
It's easy and fun to make...
Ingredients:
455g (1 lb) plain flour
115g (4 oz) self rising flour
10 large eggs
680g (1 1/2 lb) castor sugar
Ice cream soda - 1 bottle
Method:
Combine flours and sift twice
Put the steamer on (hot water in a pot with metal/bamboo steamer)
In a mixer on high, beat eggs and sugar until creamy and white
Fold in flours and cream soda, alternating
Fill in paper cups or lined cup cakes mold
Steam for 7-8 minutes
Serve warm with coffee !
