Kuih Bolu Kukus (Steamed Sponge Cake)
To make one big cake, use a baking pan but lined with parchment paper but steam for 30 mins.
Ever been to the Asian bakery and picked this fluffy and light cake that looks like a cup cake? Well, this recipe is amazing and you will not go wrong ! The secret ingredient is the Cream Soda that is added to make it really light and fluffy ! Try it !
Ingredients:
455g (1 lb) all purpose flour
115 (4 oz) self rising flour
10 large eggs room temperature
680g (1 1/2 lb) castor sugar
1 bottle (500g) of cream soda
Method:
Combine the flours and sift twice
Line patty tins (use the aluminum cup cake foil at the grocer) line with cup cake paper
Boil water in a steamer
Combine eggs and sugar in a mixer and beat at high until thick and creamy. Fold in the sifted flours and cream soda alternating between the two.
Fill each cup cake tin to the rim with cake batter.
Steam over rapidly boiling water, covered for 7-10 mins. Do not lift the lid until cakes are cooked at least 7 mins.
When done, transfer cakes to wire racks to cool.
