Potato Croquettes












Ok, I urge you to make these. You will be happy !! These potato croquettes were a major hit when I made it as a side for Thanksgiving Turkey ! They are gone in no time !

Ingredients:
4 russet potatoes, peeled cut into 1/2 inch dice
3 green onion finely sliced
1 clove garlic minced
1/2 cup parmigiano regiano cheese
3 eggs beaten
1 cup bread crumbs (Italian or Panko. I used Panko)
Oil for frying
Method:

Boil potatoes in enough salt water to cover for 10-15 mins until fork tender. Drain. Saute the green onion and garlic for few mins. In big bowl, combine the onion, garlic and potatoes. Add cheese, sea salt, freshly ground pepper and mash together.

Cover and refrigerate for 30 min.

Roll chilled potato into finger shapes and put it to tray. Leave it in the fridge until ready to fry.
Dip the fingers in beaten egg, coat bread crumbs.
Pour oil into pot or heavy pan to 375 deg F.

Fry croquettes until crispy golden. Serve hot !
