Yam Puff




Ingredients:
4 oz non-glutinous wheat flour
1 1/4 lb yam steamed and mashed
2 tsp sesame oil
Ingredients for A:
4 oz vegetable oil
1/2 tsp salt
4 tsp sugar
1 tsp pepper
Filling for Yam:
2 tsp oil
1 tsp garlic chopped
4 oz shrimps, diced
1 lb lean meat diced
2 oz canned button mushroom, diced
1 egg lightly beaten
2 tbs starch with 2 tsp water
Seasoning:
1/2 tsp salt
1 tsp pepper
3 tsp sugar
1 tsp dark soya sauce
1 tsp oyster sauce
Method:
To prepare Yam paste:
1) Blend the wheat flour with 4 fl oz boiling water in a bowl
2) Add mashed yam in small batches with sesame oil and knead till smooth. Add in ingredients from A. Mix well.
3) Divide dough into 4 parts and cut each part into equal pieces, size of walnut.
4) Roll with rolling pin to make a round wrapper
5) Fill in centre and fold and seal edges
6) Deep fry puffs in pot of oil till golden brown.
Method for filling:
Heat oil in a pan and saute garlic. Add shrimps, meat, mushrooms and stir fry for 1 min. Add beaten egg, add starch to thicken. Add seasoning and mix well. Let mixture cool.
