Rainbow Layer Cake (Kuih Lapis Beras)
Ingredients:
30 fl. oz Coconut Milk (1 can of coconut, add water to make it to 30 fl. oz)
12 oz rice flour
8 oz tapioca flour
1/4 tsp salt
16 oz sugar
10 fl. oz water
1 tb of vegetable oil for greasing the springform pan
8 screwpine leaves
Red food coloring
Method:
In a large mixing bowl, combine the two types of flour and salt. Add coconut milk a little at a time with hand and mix until it is a smooth consistency. Set aside.
In a medium pot over medium heat, bring sugar to boil in 10 fl. oz of water with screwpine leaves. Strain syrup into a bowl and add hot water if needed and bring it to 15 fl. oz.
Pour the hot syrup mixture to the flour mixture , stirring until well blended.
Divide mixture into two bowls of equal portions.
Set aside one portion. On the other bowl, add red food colouring until it achieves a pink color.
Grease a springform pan with a little vegetable oil. Add 1 cup of non-color mixture over the pan. Place the pan in a steamer and steam for about 5 mins. Open the cover, add 1 cup of pink color mixture and steam for about 5 mins. Repeat this process alternating the non-color and pink color until the last round of mixture, add a little more of the red color to achieve a bright red layer for the final layer. When done, remove from steamer and let it cool completely at room temperature before cutting.
Secret: When steaming, cover the pan with a parchment paper so that water do not drip onto the mixture when steaming. And the last layer will be smooth when done.
This recipe has been tried and this is as good as it gets if you are determined to make a successful Kuih Lapis !!
