Double Chocolate Cheesecake
This Cheesecake is just perfect - its not overly sweet, yet velvety and incredibly addictive !! I made this for my son, Michael school's Teacher Appreciation Day and for a friend of mine, Jenny's son, Jay's 20th birthday. It is amazingly easy to make and turns out perfect every time. Try it !
Recipe:
20 cream-filled chocolate cookies
1/2 stick of butter
1 12 oz pkg of semisweet chocolate morsels
3 8oz pkg of cream cheese
1 14oz of sweetened condensed milk
2 tsp vanilla extract
4 large eggs
Ganache Topping
3/4 cup whipping cream
1 6oz pkg semi sweet chocolate morsels
1 6oz pkg milk chocolate morsels
Method:
Preheat oven to 300 deg f
Using a food processor, crush the cookies and put in a mixing bowl
Melt 1/2 stick of butter and pour over cookie crumbs
Press cookie mixture on bottom of 9 inch springform pan
Melt chocolate morsels in microwave at high for 1 1/2 min or until melted stirring every 30 sec interval.
Beat Cream Cheese at medium speed with electric mixer for 2 mins or until smooth. Add sweetend condensed milk and vanilla. Add eggs 1 at a time until combined at each addition.
Add melted chocolate mixing until all are completely mixed together.
Pour cheese cake batter into prepared crust.
Bake at 300 deg f for 50 mins (some ovens are hotter so check it at 45 mins. The middle must be jiggly so that it won't crack when done). Turn off oven and let it sit in the oven with door closed for about 1 hour. Remove cheesecake and run a knife along the edge of cheesecake and let cool in pan until room temperature. Cover and chill 8 hours or overnight in refrigerator.
To serve, remove cake from pan onto a plate.
Make the Ganache Topping.
Bring cream to boil in saucepan over medium heat and quickly remove from heat. Stir in the semisweet and milk chocolate morsels until melted and smooth.
Pour over the chocolate cake and spread nicely.

ReplyDeleteThis is a GREAT recipe! I did add a small variance that affects the final appearance. I measure out a 1/8 more cream for the Granache topping. I put a small amount of white chocolate chips in a pyrex measure cup. When the cream boils, poor the "extra" into the white chocolate chips. I continue on with the Ganache topping in the recipe. I then microwave as needed to finally melt all the white chocolate then drizzle it across the cheesecake. Provides a nice decorative touch to the final product.
