Thai Glass Noodle Salad




Ingredients:

2 cups of squid, cleaned and poached for 2 mins and cut into rings. 1 cup of medium sized shrimps, poached until pink.
3 cups of glass noodles, poached for 2 mins.
a bunch of fresh coriander, chopped
1 tbs of birds eye chilies
2 1/2 tbs of lime juice (freshly squeezed)
2 1/2 tbs of Thai fish sauce (nam pla) Squid label
1 tbs of shallots - sliced
2 tbs of sugar
 
Method:

Put all the ingredients into a salad bowl and toss. Taste to ensure right amounts of saltiness, sweetness. You may add more fish sauce or sugar to adjust to taste.
