Mini Shrimp Rolls (Sambal)




This mini shrimp roll is a hit during Chinese New Year. The filling is made from dried shrimp Sambal.


Recipe:

Make sambal from this blogsite. (use Index to search for Sambal recipe)
Soak 2 pkts of dried shrimps for at least 2 hours.
Drain water and grind in blender.
Squeeze out excess water.
In a wok with hot oil (4 tbs), fry dried shrimp for about 10 mins.
Add 1 cup of sambal or more (if prefer).
Add salt and sugar to taste.
Fry until shrimp is a little dry but not completely dried out.
To roll, cut spring roll into 4 equal squares from a big square wrapper.
Fill with 1 tsp of shrimp sambal, roll and seal with egg wash.
Fry in medium hot oil until brown.
Best if serve immediately but can store in tupperware for 2-3 days.
