Yau Cha Kuai (Chinese Donuts)



Ingredients:
6 cups high protein flour (use Bread flour)
2 cup water
2 tsp baking powder
2 tsp baking soda
1 1/2 tsp alum(food grade)
1 1/2 salt
Place baking powder, baking soda, alum and salt in a mixing bowl. Add water and stir until dissolved. Add flour and mix well. Let it stand for 15-20 min. Use your hand and take some dough around the edges and drop it into center of the dough. Let stand for 15-20 mins. Continue to drop the dough in the center of the bowl 3-4 times until dough is elastic and smooth. Turn the dough over and lightly coat surface with oil. Let it stand for 1 hour. Remove dougn from the bowl and place it on a sheet of plastic wrap. Wrap dough into rectangular shape. Let it stand for 4 hours.
Unwrap dough. Use a rolling pin and roll the dough and stretch it into a long strip. Roll the dough into a rectangular shape 3 inch wide and 1/16 inch thick. Crosswise cut the rectangle dough into strips. Put two strips on top of each other to press lengthwise in the middle strips.
Heat oil for deep frying. Pick up the strip and stretch it gently and fry it until its golden brown.
