Tan Tart (Egg Tarts)


Ingredients:


3/3 cup of sugar
1 1/2 cups of water
9 eggs beaten
1 dash vanilla essence
1 cup canned evaporated milk
24 pastry cups (Dutch Ann from frozen section)
Combine sugar and water in a medium saucepan and bring to boil. Cook until sugar dissolved, remove from heat and cool at room temperature. Strain eggs (beaten with hand mixer) through a sieve and whisk into the sugar mixture. Stir in the evaporated milk and vanilla. Strain through a sieve and fill the tart shells.
Bake at 450 deg F for 15-20 mins until golden brown and filling is puffed up a little.
