Coconut Red Velvet Cake

I attempted to make this cake as I saw that Dean and Deluca had a beautiful coconut for order for Christmas. I decided to make it Red Velvet to kick it up several notches. With its Red Velvety cake inside (2 layers) and cream cheese and coconut frosting, this cake not only taste good, it was really attractive when it was served in slices.


Ingredients:

Buy 2 packets of Red Velvet cake from Duncan Hines or Betty Crocker. Bake to instructions. You will end up with 2 cakes. Then make the cream cheese icing and add coconut to it. Easy !

Cream Cheese icing:
1 pound cream cheese
2 sticks of butter (2 pounds)
1 tsp vanilla
1 pound confectioners sugar
1/2 pound coconut

Cream cream cheese, butter and sugar until light and fluffly. Add vanilla. Frosting is ready to be used.
