Soya Sauce Eggs



Recipe:

10 hard boiled eggs, shells removed.
1 cup of dark sweet soya sauce - good quality e.g. Amoy brand
1 tbs of light soya sauce - good quality
1 star anise
1 tbs of five spice powder
1 tbs of sugar
salt to taste
1/2 cup of water
2 cloves of garlic

Method:

Hit oil in a wok and saute garlic cloves, star anise. Turn to medium heat. Add sugar and when sugar is light brown, add dark soya sauce. This will bubble up. Add five spice powder, water to boil. Add the eggs, sugar, salt to taste. Cook in slow fire for an hour. The longer the eggs stay in the soya sauce, the better. Any eggs not consumed, leave it for next day which taste even better.
