Shrimp Lo Mein
I made this for Charlotte from the St. Luke's Drop in. I volunteer to cook and donate food to them once a month for the Mentally Challenged folks in Charlotte, N.C.
Recipe:
1 packet of spaghetti noodles cooked for about 10 mins or till a little over Al Dente.
1 cup of shrimp - marinate with a tsp of sugar (so that it keeps its crunch)
4 cups of mixed vegetables.

1/4 cup of Oyster sauce (see picture)
2 tbl of dark soya sauce (dark)
2 tbl of light soya sauce (light)
1/4 cup of Shoaxing chinese cooking wine (I ran out so I used Fukien wine see picture)
1/4 cup of water mixed with 1 tbl of cornstarch and 1 tbl of sugar
1 tbl of sesame oil
1/4 cup of vegetable oil
1 tbl of light pepper
1 tbl of chopped garlic
a tbp of sugar to marinate the shrimp
Method:
Clean and wash shrimp and marinate with sugar, keep aside. In a small bowl, put 1/4 cup of water and cornstarch and sugar.
Cook spaghetti noodles in a pot of boiling water approx 10 mins or a little over Al Dente. Drain and keep aside.
Heat a wok over high heat, add vegetale oil and saute the garlic. Add the shrimp, vegetables, oyster sauce and stir fry for 1 min or until shrimp are pink and vegetables are a little cooked (not completely otherwise it will be soggy when dish is done). Add the noodles and continue to stir fry. Add the light soya sauce, dark soya sauce and chinese cooking wine. Stir fry for another minute, add corn starch, pepper and sesame oil. Noodles should be brownish and taste to make sure its salty enough otherwise add light soya sauce or a dash of sugar.
Serve hot. Yummy.
Why oh why do people try to cook Chinese chow mein with Italian spaghetti???...disgusting!!! at least use rice noodles, for one, they are a darn site cheaper!!
