Chinese Fried Chicken Wings









My sister Elsie, taught me how to make this Chinese classic. If you like Chinese fried chicken wings, this is the recipe that you can create at home. It is crispy on the outside, juicy in the inside.
Recipe:
1 pound of chicken wings
1 tbs of soya sauce
1 tbs of salt
1 tbs of white pepper
1 tbs of five spice powder
1 tbs of tumeric powder
a dash of sugar
Batter:
1 cup of Chinese Rice powder (see picture)
1 tsp of cornstarch
1 tsp of baking powder
Method:
Marinate Chicken Wings with the seasonings overnight in the refrigerator.
Frying:
Ice cold water - about 1/2 cup but adjust to get a runny consistency.
Mix the batter with ice cold water to ensure that batter is runny and not thick.
Heat 3 cups of vegetable oil in a pot on high. When oil is very hot, dip the wings in the batter and drop into oil. Put a batch of 3 wings together and lower temp to medium. Do not put another more wings until this batch is done.
Then turn up the heat high for the next batch and lower to medium to ensure the inside of wings are cooked.
Put wings on paper towel to soak up the excess oil. Serve hot !!
