Banana Chiffon Cake


I had left over bananas and decided to make this. Once you make this Banana Chiffon cake, you will not want any banana bread or coffee cake as this Banana Chiffon cake is so light and great with coffee or tea. My kids love it !!
Recipe
2 eggs separated
1 1/3 cups sugar
1/3 cup of vegetable oil
2 cups of flour sifted
1 tsp baking powder
1 tsp salt
1 cup mashed bananas
2/3 cup buttermilk
1 tsp vanilla
1 tsp cream of tartar
Method
Mix baking powder, flour, salt and soda in a bowl.
In another bowl, mix mashed bananas, vegetable oil, buttermilk, egg yolks and beat for 2 minutes. Mix in the flour.
In an electric mixer, beat the egg whites, sugar and cream of tartar until peak forms.
Fold the egg whites into the egg yolk and flour mixture, folding with a spatula gently until egg white is all folded in.
In an Angel Food pan, line the bottom with parchment paper and spray with PAM. Pour the mixture into the pan and bake for 30 mins in a 350 degree oven.
