My Dad's Chicken Curry - Malaysian Style
Recipe:
Ingredients: Meat - 1 Chicken, skinless and cut up into big bite pieces.
3 pcs of potatoes (Russet or Baking potatoes), peeled and cut up into big bite pieces
3 curry leaves
1/2 cup of onions
3 cloves of garlic
1 cinnamon
2 star anise
1/2 cup of "My Dad's" curry powder
a dash of sugar (optional)
1 tbsp of knorr chicken seasoning
1 tbsp of salt
3 tbs of oil
2 tbs of thick coconut milk or cream.
1 cup of water
Method: Use an electric grinder - grind onion, garlic. (If you do not want to grind, chopped them finely).
1) In a pot over medium-high heat, add oil, saute the onion and garlic mixture until fragrant.
2) Add cinnamon, star anise, curry leaves and fry for 1 min.
3) Add curry powder and fry for about 2 mins or until fragrant.
4) Add meat and potatoes and stir fry until meat is all coated with curry mixture and cooked outside.
5) Add 1 cup of water and simmer over medium/low heat for about 20mins and/or potatoes are soft.
6) Add knorr seasoning, sugar, salt to taste. Add 2 tbs of coconut milk or cream.
7) Turn off heat and serve Curry with Rice, Bread or Indian Roti (see picture).
Annie, you may like to add the following spices to give it the indian kick.-:

1 tsp cummin powder
1/2 tsp corainder powder.
1 tsp white peppercorns crushed.
To get the chilli paste. i always put fresh chilli, fresh bird peak chilli and soaked dry chilli and add a bit of water and use a electric grinder to form a good hot chilli paste.
