Korean Chap Cheh - Glass Noodles

My Korean friend Kim Mallow made this Korean dish for our Charlotte Asian Ladies Potluck. The noodle after its cooked are transparent also known as glass/cellophane noodles.

Recipe:
1 pkt of Korean glass noodles
1 cup of beef 1 cup of wood ear
1 cup of carrots 1 cup of onion
1/2 cup of red/yellow pepper
1 bunch of spinach
1 clove of garlic
2 tbsp of sesame oil
2 tbsp of soya sauce
2 tbsp of sugar
1 tsp of salt

Method: Cook glass noodle in boiling water for about 7 mins. Remove and drain and run under cold water to stop noodle from cooking. Put them in a colander. Julianne (sliced) all the ingredients. In a fry pan, saute the beef, garlic, onion, peppers, carrots, spinach in sesame oil. Add sugar, soya sauce. In a salad bowl, mix the glass noodle and the sauteed ingredients and toss evenly. Serve hot or cold.
